    Prepare the Filling

    In a skillet, heat olive oil over medium heat. Add chopped onions and sauté until translucent. If using ground beef or chicken, add it to the skillet and cook until fully browned. Stir in ground cumin, salt, and black pepper.

    Assemble the Enchiladas

    Preheat your oven to 350°F (175°C). Take a corn tortilla, place a spoonful of the meat and onion mixture, and a sprinkle of shredded cheese in the center. Roll the tortilla tightly and place it seam-side down in a baking dish. Repeat with the remaining tortillas.

    Add Sauce and Cheese

    Once all tortillas are in the baking dish, pour enchilada sauce evenly over the top. Sprinkle any remaining cheese on top of the sauce.

    Bake

    Cover the baking dish with aluminum foil and bake for 20 minutes. Then, remove the foil and bake for an additional 10 minutes, or until the cheese is bubbly and slightly golden.

    Serve

    Remove from the oven and let cool for a few minutes before serving. Enjoy your enchiladas with sour cream or guacamole if desired.
