    Prepare the Filling

    In a large skillet, heat olive oil over medium heat. Add diced onion and minced garlic, sauté until translucent. Add ground beef, cumin, chili powder, salt, and pepper. Cook until the beef is browned and cooked through. Drain any excess fat.

    Assemble the Enchiladas

    Preheat the oven to 350°F (175°C). In a large baking dish, spread a thin layer of enchilada sauce on the bottom. Take a corn tortilla, fill it with a portion of the beef mixture and a sprinkle of cheese, then roll it up and place it seam-side down in the baking dish. Repeat with remaining tortillas.

    Add Sauce and Cheese

    Once all enchiladas are assembled in the dish, pour the remaining enchilada sauce over the top and sprinkle with the remaining cheese.

    Bake

    Cover the dish with aluminum foil and bake in the preheated oven for 20 minutes. Remove foil and bake for an additional 10 minutes, or until the cheese is bubbly and golden.
