    Prepare the Enchiladas

    Preheat the oven to 375°F (190°C). In a skillet, heat olive oil over medium heat. Add shredded chicken, chili powder, cumin, salt, and pepper. Mix well and cook for 5 minutes. Take a corn tortilla, fill it with some chicken mixture, roll it up, and place it seam side down in a baking dish. Repeat with remaining tortillas. Pour enchilada sauce over the top and sprinkle with cheese. Bake for 20 minutes.

    Make the Tamales

    In a bowl, prepare tamale masa according to package instructions. Spread a spoonful of masa on a corn husk, add a small amount of shredded chicken or cheese if desired, and fold. Place tamales upright in a pot with water, cover, and steam for about 1 hour.

    Prepare the Rice and Beans

    While the tamales are steaming, cook white rice according to package instructions. Heat refried beans in a saucepan until warm. Season with salt and pepper to taste.
