Season the Beef
Add taco seasoning to the beef in the skillet and mix well. Follow package instructions for adding water if necessary. Simmer for 5 minutes.

Prepare the Enchiladas
Preheat the oven to 350°F (175°C). Take a corn tortilla, add a portion of seasoned beef and a sprinkle of cheese, roll it up, and place it seam-side down in a baking dish. Repeat for all tortillas.

Bake the Enchiladas
Top the rolled enchiladas with additional cheese and bake in the oven for 15-20 minutes until cheese is melted and bubbly.

Assemble the Taco
In a separate corn tortilla, add a portion of seasoned beef, lettuce, diced tomatoes, and sour cream. Fold and set aside.

Heat the Refried Beans and Rice
In a small saucepan, heat the refried beans and cooked rice over low heat until warmed through.

Serve
On a plate, serve one enchilada, one taco, a portion of rice, and refried beans. Garnish with extra sour cream if desired.
