    Cook the Rice

    In a medium saucepan, combine 1 cup of white rice with 2 cups of water and a pinch of salt. Bring to a boil, then reduce heat to low, cover, and simmer for about 18 minutes or until rice is tender. Fluff with a fork and set aside.

    Prepare the Beef Filling

    In a large skillet, heat 2 tablespoons of vegetable oil over medium heat. Add the diced onion and minced garlic, sautéing until the onion is translucent. Add the ground beef, cumin, salt, and pepper. Cook until the beef is browned and cooked through. Drain excess fat if necessary.

    Assemble the Enchiladas

    Preheat the oven to 350°F (175°C). In a 9x13 inch baking dish, spread a thin layer of enchilada sauce. Take a corn tortilla, fill it with the beef mixture and a sprinkle of cheese, then roll it up and place it seam side down in the dish. Repeat with remaining tortillas.

    Add Sauce and Cheese

    Once all enchiladas are in the dish, pour the remaining enchilada sauce over the top. Sprinkle the remaining cheese evenly across the surface.

    Bake

    Cover the dish with foil and bake in the preheated oven for 20 minutes. Remove the foil and bake for an additional 10 minutes, or until the cheese is bubbly and golden.
