Prepare the Beef
In a skillet over medium heat, add vegetable oil. Once hot, add chopped onions and sauté until translucent. Then add ground beef, chili powder, cumin, salt, and black pepper. Cook until the beef is browned and cooked through.

Make the Tacos
Heat corn tortillas in a separate pan until warm. Fill two tortillas with the cooked beef mixture and sprinkle with shredded cheese. Fold and set aside.

Prepare the Enchilada
In a baking dish, spread a layer of refried beans. Fill one tortilla with the beef mixture, roll it up, and place it seam-side down in the dish. Pour green chile sauce over the enchilada and top with remaining shredded cheese. Bake at 350°F (175°C) for 15-20 minutes.

Make Chile Con Queso
In a saucepan over low heat, melt shredded cheese with a splash of milk, stirring until smooth. Adjust seasoning with salt and pepper.

Serve
Serve the tacos alongside the enchilada and a bowl of chile con queso. Add sour cream on top of the tacos.
