Prepare the Chalupa
In a skillet, cook the ground beef over medium heat until browned. Season with salt and pepper. Fill chalupa shells with ground beef, shredded lettuce, diced tomatoes, and a dollop of sour cream. Drizzle salsa on top and set aside.

Make the Chile Relleno
Roast the poblano peppers over an open flame or under a broiler until charred. Place in a plastic bag for 10 minutes, then peel off the skin. Stuff each pepper with cheddar cheese. In a bowl, beat the eggs until fluffy. Dip the stuffed peppers in flour, then in the egg mixture, and fry in hot oil until golden brown. Drain on paper towels.

Heat the Refried Beans
In a small pot, heat the refried beans over low heat until warm, stirring occasionally.

Serve
On a plate, serve the chalupa alongside the chile relleno and a generous scoop of refried beans.
