Prepare the Taco
In a skillet, heat olive oil over medium heat. Add ground beef and taco seasoning, cooking until the beef is browned. Fill the taco shell with the beef, topped with lettuce, diced tomatoes, and sour cream.

Make the Enchiladas
In a separate bowl, mix refried beans with chili powder and cumin. Spread a layer of the bean mixture on each corn tortilla, sprinkle with shredded cheese, and roll them up. Place them seam-side down in a baking dish.

Bake the Enchiladas
Preheat oven to 350°F (175°C). Bake the enchiladas for 15 minutes or until cheese is melted and bubbly.

Prepare the Rice
While the enchiladas are baking, prepare the cooked rice according to package instructions.

Once everything is ready, serve the taco alongside the enchiladas and a portion of rice.
