Preheat the oven to 375°F (190°C). Roast the poblano peppers until charred, then place them in a bowl and cover with plastic wrap to steam for 10 minutes. Once cooled, peel the skin off, make a slit, and remove seeds. Stuff each pepper with cheddar cheese, then place them in a baking dish and bake for 20 minutes.

Cook the Ground Beef
In a skillet over medium heat, cook the ground beef until browned. Add taco seasoning and 1/4 cup of water, stir well, and simmer for 5-7 minutes.

Prepare the Salad
In a large bowl, combine black beans, cherry tomatoes, red onion, and lettuce. Toss gently to combine. In a separate bowl, mash the avocados and mix with lime juice, cilantro, salt, and pepper to create the guacamole.
