    Cook the Rice

    In a medium saucepan, bring 2 cups of water to a boil. Add 1 cup of long-grain rice and 1 tsp of salt. Stir, cover, and reduce heat to low. Cook for about 18-20 minutes until rice is tender and water is absorbed. Remove from heat and let it sit covered for 5 minutes.

    Prepare the Chicken

    While the rice is cooking, season the chicken breasts with olive oil, black pepper, and garlic powder. Preheat a grill or grill pan over medium-high heat.

    Grill the Chicken

    Place the seasoned chicken on the grill and cook for about 6-7 minutes on each side or until fully cooked and juices run clear. Remove from grill and let rest for a few minutes.

    Assemble the Dish

    Slice the grilled chicken into strips. Fluff the cooked rice with a fork and place it on a serving plate. Top the rice with sliced chicken and sprinkle with cheddar cheese.
