Prepare the Ingredients

In a skillet, heat olive oil over medium heat. Sauté the chopped onion until translucent. Add the shredded chicken and season with salt and pepper. Mix well and cook for 3-4 minutes until heated through.

Assemble the Enchiladas

Warm the corn tortillas in a dry skillet or microwave. Place a portion of the chicken mixture in the center of each tortilla, roll them up, and place them seam-side down in a greased baking dish.

Add the Sauces

Pour the red enchilada sauce over half of the enchiladas and the green enchilada sauce over the other half. Sprinkle the shredded cheese on top.

Bake the Enchiladas

Preheat the oven to 350°F (175°C). Bake uncovered for 20-25 minutes, or until the cheese is bubbly and golden.

Serve

Remove from the oven and let it rest for 5 minutes. Top with chopped cilantro, slices of avocado, and a dollop of sour cream before serving.
