    Prepare the Brown Rice

    Rinse 1 cup of brown rice under cold water. In a saucepan, combine the rinsed rice with 2 cups of water and a pinch of salt. Bring to a boil over high heat, then reduce to low heat, cover, and simmer for 45 minutes or until the rice is tender and the water is absorbed. Remove from heat and let it sit covered for 10 minutes.

    Cook the Black Beans

    If using canned black beans, rinse and drain 1 cup of beans. In a small saucepan, heat the beans over medium heat, adding a little water if necessary. Season with salt and pepper to taste. Cook for about 5-7 minutes until heated through.

    Cook the Eggs

    In a skillet, heat 1 tablespoon of olive oil over medium heat. Crack 2 eggs into the skillet. Cook sunny side up, over easy, or scrambled, depending on your preference. Season with salt and black pepper to taste. Cook for about 3-5 minutes until the whites are set and the yolks are at your desired doneness.

    Prepare the Protein

    Cook your choice of protein (e.g., chicken sausage, tofu, or bacon) according to package instructions or your preferred method. Ensure it's cooked thoroughly and has a nice sear.

    Assemble the Plate

    On a plate, serve a generous portion of brown rice and top it with black beans. Place the cooked eggs on one side and add the prepared protein on the other. Slice half an avocado and place it on the plate for garnish.
