Cook Brown Rice

In a pot, bring 2 cups of water to a boil. Add 1 cup of brown rice, cover, and reduce heat to low. Simmer for about 45 minutes or until tender. Fluff with a fork and set aside.

Prepare Black Beans

If using canned black beans, drain and rinse them under cold water. If using dried beans, soak overnight and cook according to package instructions until tender.

Choose Your Protein

Select your choice of protein (grilled chicken, ground beef, or tofu) and cook as desired. For grilled chicken, season with salt and pepper, and grill for about 6-8 minutes per side until fully cooked. For ground beef, brown in a skillet until no longer pink. For tofu, cube and sauté in a pan until golden.

Assemble Burrito

Lay the flour tortilla flat on a clean surface. Layer 1 cup of cooked brown rice, 1 cup of black beans, your chosen protein, and 1 cup of shredded cheese down the center of the tortilla.

Roll the Burrito

Fold the sides of the tortilla over the filling, then roll from the bottom up to enclose the filling. Ensure it is tightly wrapped.

Serve

Slice the burrito in half diagonally and serve immediately, or wrap in foil to keep warm.
