Marinating the Pork

    Prepare Marinade

    In a large bowl, combine pineapple juice, white vinegar, adobo sauce, minced garlic, oregano, cumin, salt, and black pepper. Mix well.

    Marinate the Pork

    Cut the pork shoulder into small chunks and add to the marinade. Ensure the pork is well coated. Cover and refrigerate for at least 4 hours, preferably overnight.

Cooking the Pork

    Cook the Pork

    Preheat your grill or skillet over medium-high heat. Remove the pork from the marinade and grill or sear in the skillet until cooked through and nicely browned, about 20-25 minutes.

    Let it Rest

    Once cooked, remove the pork from the heat and let it rest for 10 minutes before slicing it thinly.

Assembling the Tacos

    Warm the Tortillas

    While the pork is resting, warm the corn tortillas on the grill or in a skillet for about 30 seconds on each side.

    Assemble Tacos

    On each tortilla, place a portion of the sliced pork, top with diced pineapple, red onion, and chopped cilantro. Serve with lime wedges and salsa on the side.
