Marinade Preparation
Prepare the Chicken
Cut the chicken breast into bite-sized pieces and place them in a bowl.
Mix the Marinade
In a separate bowl, combine soy sauce, cornstarch, Szechuan peppercorns, grated ginger, minced garlic, and sesame oil. Mix well to create a marinade.
Marinate the Chicken
Pour the marinade over the chicken pieces and stir to coat evenly. Cover and let marinate for at least 30 minutes (or up to 2 hours in the refrigerator).
Cooking
Heat the Oil
In a large skillet or wok, heat the vegetable oil over medium-high heat.
Combine Ingredients
Return the cooked chicken to the skillet with the vegetables. Add Szechuan chili paste and water, stirring well to combine everything. Cook for another 2-3 minutes until heated through and the sauce thickens slightly.
Finish and Serve
Garnish with chopped green onions and serve hot over rice or noodles.
