Marinade Preparation

Prepare the Chicken

Cut the chicken breast into bite-sized pieces and place them in a bowl.

Mix the Marinade

In a separate bowl, combine soy sauce, cornstarch, Szechuan peppercorns, grated ginger, minced garlic, and sesame oil. Mix well to create a marinade.

Marinate the Chicken

Pour the marinade over the chicken pieces and stir to coat evenly. Cover and let marinate for at least 30 minutes (or up to 2 hours in the refrigerator).

Cooking

Heat the Oil

In a large skillet or wok, heat the vegetable oil over medium-high heat.

Stir-Fry the Chicken

Add the marinated chicken to the skillet and stir-fry for about 5-7 minutes until the chicken is cooked through and lightly browned. Remove the chicken from the skillet and set aside.

Cook the Vegetables

In the same skillet, add the sliced red and green bell peppers, and julienned carrot. Stir-fry for about 3-4 minutes until they are slightly tender.

Combine Ingredients

Return the cooked chicken to the skillet with the vegetables. Add Szechuan chili paste and water, stirring well to combine everything. Cook for another 2-3 minutes until heated through and the sauce thickens slightly.

Finish and Serve

Garnish with chopped green onions and serve hot over rice or noodles.
