Method

Prepare the Meat

  1. 1

    Cook Ground Beef

In a skillet over medium heat, cook 1 pound of ground beef until browned, about 7-10 minutes. Drain excess fat.

  2. 2

    Cook Chicken Breast

In a pot, boil 1 pound of chicken breast in salted water until fully cooked, about 15-20 minutes. Shred once cooled.

  3. 3

    Cook Pork Shoulder

In a slow cooker, add 1 pound of pork shoulder and cook on low for 8 hours or high for 4 hours until tender. Shred once cooked.

Prepare Taco Fillings

  1. 4

    Sauté Vegetables

In a skillet, heat a small amount of oil over medium heat. Sauté 1 diced medium onion, 2 minced garlic cloves, and 1 diced bell pepper until softened, about 5-7 minutes.

  2. 5

    Combine Seasoning

In a bowl, mix the sautéed vegetables with 0.5 cups chopped cilantro, 2 tbs lime juice, 1 tsp salt, and 0.5 tsp black pepper.

Assemble Tacos

  1. 6

Warm the corn tortillas in a dry skillet for about 30 seconds on each side until pliable.

  2. 7

Add your choice of meat (ground beef, chicken, or pork) to each tortilla.

  3. 8

Top with the vegetable mixture, shredded lettuce, diced tomatoes, sour cream, shredded cheese, and salsa.

  4. 9

Fold the tortillas in half and serve immediately.
