Method

Marinating the Pork

    Prepare the Marinade

    In a blender, combine the pineapple juice, white vinegar, dried ancho chilies (soaked in hot water for 15 minutes and drained), garlic cloves, ground cumin, oregano, salt, black pepper, and adobo sauce. Blend until smooth.

    Marinate the Pork

    Cut the pork shoulder into small chunks and place them in a large bowl. Pour the marinade over the pork, ensuring all pieces are well-coated. Cover and refrigerate for at least 4 hours, preferably overnight.

Cooking the Pork

    Cook the Pork

    Preheat your grill or skillet over medium-high heat. Remove the pork from the marinade, allowing excess marinade to drip off. Grill or sear the pork for about 15-20 minutes, turning occasionally, until cooked through and slightly charred.

    Rest the Pork

    Once cooked, remove the pork from the heat and let it rest for about 5 minutes. Then chop into small pieces.

Assembling the Tacos

    While the pork is resting, finely chop the white onion and fresh cilantro. Dice the pineapple into small chunks.

    In a dry skillet, heat the corn tortillas for about 30 seconds on each side until warm and pliable.

    On each tortilla, add a generous portion of the chopped pork, followed by the diced pineapple, chopped onion, and cilantro. Squeeze fresh lime juice over the top.
