Preparation of Rice Mixture

    Rinse and Soak the Rice

    Rinse the long-grain white rice under cold water until the water runs clear to remove excess starch. Soak the rinsed rice in 2 cups of water for at least 4 hours, or overnight for best results.

    Blend the Rice

    After soaking, drain the rice and add it to a blender along with the remaining 2 cups of water. Blend on high until the rice is finely ground and the mixture is somewhat cloudy, about 1-2 minutes.

Infusing Flavor

    Combine and Infuse

    Pour the blended rice mixture into a large bowl or pitcher. Add the cinnamon stick and let it sit at room temperature for about 2 hours to infuse the flavors.

Straining and Finalizing

    Strain the Mixture

    After the infusion period, strain the mixture through a fine-mesh sieve or cheesecloth into another bowl or pitcher. Press down on the solids to extract as much liquid as possible.

    Sweeten and Add Milk

    Remove the cinnamon stick and stir in the sugar and vanilla extract until dissolved. Then, add the milk (or almond milk) and mix well.

    Chill and Serve

    Chill the horchata in the refrigerator for at least 30 minutes before serving. Serve in glasses over ice and sprinkle with ground cinnamon before enjoying.
