Filling Preparation

    Prepare the Filling

    In a mixing bowl, combine the shredded chicken, chopped onion, chopped cilantro, and half of the shredded cheddar cheese. Mix well and set aside.

Green Sauce Preparation

    Make the Green Sauce

    In a saucepan, combine the tomatillos, chopped jalapeño, minced garlic, quartered onion, lime juice, salt, and water. Bring to a boil, then reduce heat and simmer for 10 minutes, until tomatillos are soft.

    Blend the Sauce

    Transfer the mixture to a blender and puree until smooth. Taste and adjust seasoning if necessary. Set aside.

Assembly and Baking

    Fill the Tortillas

    Preheat your oven to 375°F (190°C). Take a corn tortilla, fill it with about 2 tablespoons of the chicken filling, and roll tightly. Place seam side down in a baking dish.

    Top with Sauce and Cheese

    Repeat until all tortillas are filled and placed in the baking dish. Pour the green sauce evenly over the enchiladas and sprinkle the remaining cheddar cheese on top.

    Bake

    Cover the baking dish with foil and bake for 20 minutes. Remove the foil and bake for an additional 10 minutes, until the cheese is melted and bubbly.

Serving

    Serve

    Remove from the oven, let cool for a few minutes, and serve warm with a dollop of sour cream on top.
