    Prepare the Dough

    In a medium saucepan, combine water, 2 tablespoons of sugar, salt, and 2 tablespoons of vegetable oil over medium heat. Bring to a boil.

    Mix in Flour

    Once boiling, remove from heat and stir in flour until well combined. The mixture will form a ball. Allow it to cool for about 10 minutes.

    Add Eggs and Flavor

    After cooling, add eggs one at a time, mixing well after each addition. Stir in vanilla extract and continue mixing until smooth.

    Heat Oil

    In a deep frying pan, heat vegetable oil over medium-high heat until it reaches 350°F (175°C).

    Pipe and Fry Churros

    Transfer the dough to a piping bag fitted with a star tip. Pipe strips of dough into the hot oil, cutting them to your desired length. Fry until golden brown, about 2-3 minutes per side. Remove and drain on paper towels.

    Dust with Cinnamon Sugar

    Combine remaining sugar and cinnamon in a shallow dish. Roll the hot churros in the cinnamon sugar mixture until evenly coated.

    Heat the Cream

    In a small saucepan, heat heavy cream over medium heat until it begins to simmer.

    Melt Chocolate

    Remove from heat and add chocolate chips. Let sit for a minute, then stir until melted and smooth.

    Add Vanilla

    Stir in vanilla extract until fully incorporated. Serve warm with churros.
