    Prepare the tortillas

    Cut each corn tortilla into 6 equal triangles to form the chips.

    Heat the oil

    In a large skillet or deep fryer, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).

    Fry the chips

    Once the oil is hot, carefully add a handful of tortilla triangles to the oil. Fry them for about 2-3 minutes or until they are golden brown and crispy.

    Drain and season

    Remove the fried chips with a slotted spoon and place them on a plate lined with paper towels to drain excess oil. While they are still hot, sprinkle with salt to taste.

    Chop the vegetables

    Finely chop the tomatoes, onion, and jalapeño pepper. Remove the seeds from the jalapeño for less heat, if desired.

    Mix the ingredients

    In a medium bowl, combine the chopped tomatoes, onion, jalapeño, and roughly chopped cilantro.

    Add lime and season

    Squeeze the juice of the lime over the mixture and add salt. Stir well to combine all ingredients.

    Allow the salsa to sit for at least 15 minutes at room temperature to let the flavors meld together before serving.
