    Prepare the sausage mixture

    In a large mixing bowl, combine the ground pork, minced garlic, fennel seeds, paprika, crushed red pepper flakes, salt, black pepper, oregano, basil, and white wine (if using). Mix thoroughly until all ingredients are well incorporated.

    Prepare the casings

    If using natural casings, rinse them thoroughly under cold water and soak in water for about 30 minutes. Then, flush the casings with water to remove any salt.

    Stuff the sausages

    Carefully load the sausage mixture into a sausage stuffer fitted with the prepared casings. Fill the casings with the meat mixture, being careful not to overstuff. Tie off the ends of the sausages with kitchen twine.

    Cook the sausages

    The sausages can be grilled, pan-fried, or baked until they reach an internal temperature of 160°F (70°C). Cook for about 15-20 minutes, turning occasionally for even cooking.

    Let the sausages rest for a few minutes after cooking. Serve hot with your choice of sides or on a bun.
