    Prepare the Potatoes

    Peel and boil the potatoes in salted water until tender. Drain and mash until smooth. Let cool.

    Cook the Filling

    In a skillet, heat a little oil over medium heat. Add chopped onion, garlic, and bell pepper. Sauté until softened. Add ground beef and cook until browned. Stir in olives, cumin, salt, and black pepper. Remove from heat and let cool.

    Form the Balls

    Once the mashed potatoes and filling have cooled, take a portion of mashed potatoes in your hand, flatten it, place a spoonful of the beef filling in the center, and then mold the potato around the filling to form a ball. Repeat with remaining ingredients.

    Coat the Balls

    Dip each potato ball in beaten eggs and then roll in breadcrumbs to coat evenly.

    Fry the Potato Balls

    In a large pot or deep fryer, heat oil over medium-high heat. Fry the potato balls in batches until golden brown and crispy, about 4-5 minutes per batch. Drain on paper towels.

    Serve

    Serve the Relleno de Papa hot as an appetizer or main dish.
