    Prepare the Chicken

    Heat olive oil in a large pot or Dutch oven over medium-high heat. Season the chicken thighs with salt and black pepper. Once the oil is hot, add the chicken and brown on all sides, about 5-7 minutes. Remove the chicken from the pot and set aside.

    Sauté Vegetables

    In the same pot, add the chopped onion, bell pepper, and minced garlic. Sauté until the onions are translucent, about 5 minutes.

    Add Tomatoes and Spices

    Stir in the diced tomatoes, cumin, oregano, and bay leaves. Cook for an additional 3-4 minutes until the tomatoes start to break down.

    Combine Ingredients

    Return the browned chicken to the pot and pour in the chicken broth. Bring to a simmer.

    Cook the Stew

    Cover the pot, reduce heat to low, and let it simmer for about 30-40 minutes, or until the chicken is tender and cooked through.

    Remove bay leaves before serving. Garnish with chopped cilantro and serve hot.
