Pollo Asado Ingredients

Method

Cooking Instructions

  1. 1

    Prepare the Marinade

In a bowl, combine olive oil, lemon juice, minced garlic, ground cumin, paprika, oregano, salt, and black pepper. Mix well to create a marinade.

  2. 2

    Marinate the Chicken

Place the whole chicken in a large resealable bag or a dish. Pour the marinade over the chicken, ensuring it's well coated. Add bay leaves. Seal the bag or cover the dish and refrigerate for at least 2 hours, preferably overnight.

  3. 3

    Preheat the Oven

Preheat your oven to 375°F (190°C).

  4. 4

    Roast the Chicken

Remove the chicken from the marinade and place it in a roasting pan. Roast in the preheated oven for about 1.5 hours or until the internal temperature reaches 165°F (75°C). Baste the chicken with the juices every 30 minutes for extra flavor.

  5. 5

    Rest and Serve

Once cooked, remove the chicken from the oven and let it rest for 10-15 minutes before carving. Serve warm, with your choice of sides.
