    Prepare the Marinade

    In a food processor, combine the garlic, olive oil, oregano, cumin, salt, black pepper, and lime juice. Blend until smooth.

    Marinate the Pork

    Make deep cuts in the pork shoulder and rub the marinade all over the meat, ensuring it gets into the cuts. Place bay leaves on top of the meat. Cover and refrigerate for at least 12 hours, preferably overnight.

    Preheat the Oven

    Preheat your oven to 300°F (150°C).

    Roast the Pork

    Place the marinated pork shoulder in a roasting pan and cover with aluminum foil. Roast in the preheated oven for about 4 hours or until the meat is tender and easily pulls apart.

    Crisp the Skin

    Remove the foil and increase the oven temperature to 400°F (200°C). Roast for an additional 30 minutes or until the skin is crispy and golden brown.

    Rest and Serve

    Remove from the oven and let the pork rest for 15 minutes before slicing. Serve with your choice of sides.
