Cook the Filling
In a large skillet over medium heat, add the ground beef, chopped onion, and minced garlic. Cook until the beef is browned and the onions are translucent, about 7-10 minutes. Drain excess fat.

Prepare the Dough
Roll out the empanada dough on a floured surface to about 1/8 inch thick. Cut into circles, approximately 5-6 inches in diameter.

Assemble the Empanadas
Place a spoonful of the beef and cheese filling in the center of each dough circle. Top with a tablespoon of shredded cheddar cheese. Fold the dough over to create a half-moon shape and press the edges to seal. Use a fork to crimp the edges for a decorative finish.

Cook the Empanadas
In a large skillet, heat oil over medium heat. Fry the empanadas in batches until golden brown, about 3-4 minutes per side. Alternatively, bake in a preheated oven at 375°F (190°C) for 20-25 minutes.

Let the empanadas cool slightly before serving. Serve warm with your favorite salsa or dipping sauce.
