    Rinse the dried beans under cold water and place them in a large bowl. Cover with water and let soak overnight.

    Drain the soaked beans and transfer them to a large pot. Add 8 cups of fresh water. Bring to a boil over medium-high heat, then reduce to a simmer. Cook for about 1-2 hours, or until the beans are tender.
