    Prepare the Yuca

    Peel the yuca and cut it into chunks. Boil the yuca in salted water for about 20 minutes or until tender. Drain and allow to cool slightly before mashing.

    Make the Filling

    In a skillet, heat the olive oil over medium heat. Add the chopped onion, garlic, and green bell pepper. Sauté until softened. Add the ground beef or pork, cumin, salt, and pepper. Cook until the meat is browned. Set aside to cool.

    Prepare the Dough

    In a mixing bowl, combine the mashed yuca and the mashed ripe plantain. Mix until smooth and well combined. This will be your dough.

    Form Alcapurias

    Take a portion of the yuca dough and flatten it in your palm. Place a spoonful of the meat filling in the center and fold the dough over to enclose the filling. Shape it into a patty.

    Fry the Alcapurias

    Heat the oil in a deep frying pan over medium heat. Fry the alcapurias in batches until golden brown and crispy, about 3-4 minutes per side. Drain on paper towels.
