Ceviche Preparation

    Prepare Shrimp

    Start by peeling and deveining the raw shrimp. Rinse them under cold water and pat them dry with a paper towel.

    Marinate Shrimp

    Chop the shrimp into small bite-sized pieces and place them in a bowl. Pour the lime juice over the shrimp, ensuring they are fully submerged. Cover the bowl and refrigerate for about 30 minutes, allowing the shrimp to 'cook' in the acidity of the lime juice.

    Chop Vegetables

    While the shrimp is marinating, finely chop the red onion, tomato, cilantro, and jalapeño. Set aside.

    Combine Ingredients

    After 30 minutes, check the shrimp; they should be opaque. Drain excess lime juice if necessary. Add the chopped vegetables, salt, and black pepper to the shrimp and mix well. Adjust seasoning to taste.

    In a skillet, heat the olive oil over medium heat. Fry the corn tortillas one at a time until they are crispy and golden brown, about 2-3 minutes per side. Drain on paper towels and season with sea salt.

    Slice the avocados in half, remove the pit, and scoop the flesh into a bowl. Mash the avocado with a fork until smooth. Season with salt to taste.
