In a large skillet, heat olive oil over medium heat. Add chopped onions and sauté until translucent, about 3-4 minutes.

Add Spinach and Tomatoes

Stir in the chopped spinach and tomatoes, cooking for an additional 2-3 minutes until the spinach wilts.

Pour in the Just Eggs and add hemp seeds, turmeric, nutritional yeast, salt, and black pepper. Stir well to combine.

Cook the Scramble

Cook the mixture for about 5-7 minutes, stirring frequently until the egg substitute is cooked through and slightly firm.

Gather the ingredients for the charro beans.

Sauté Onions and Garlic

In a separate saucepan, heat a bit of olive oil over medium heat. Add chopped onions and minced garlic, sautéing until soft and fragrant, about 3-4 minutes.

Add canned pinto beans (drained and rinsed), chopped tomatoes, ground cumin, smoked paprika, salt, and black pepper to the saucepan.
