Preparation

Cook the Chorizo
In a skillet over medium heat, cook the chorizo sausage until browned and fully cooked, about 5-7 minutes. Break it apart with a spatula as it cooks. Remove from heat and set aside.

Prepare the Cheese Mixture
In a mixing bowl, combine the Mexican cheese blend, Monterey Jack cheese, and cream cheese. Mix well until evenly combined.

Prepare the Tortillas
Warm the corn tortillas in a dry skillet over medium heat for about 30 seconds on each side until soft and pliable. Set aside.

Melt the Cheese
In an oven-safe skillet, combine the cooked chorizo and the cheese mixture. Place the skillet over low heat on the stovetop. Stir continuously until the cheese is melted and bubbly, about 5-10 minutes.

Broil for Extra Melt
For an extra gooey texture, place the skillet under the broiler in your oven for 2-3 minutes until the top is slightly golden and bubbly. Keep an eye on it to prevent burning.

Garnish and Serve
Remove the skillet from the oven, and garnish the queso fundido with fresh cilantro, sour cream, and sliced jalapeños. Serve immediately with warm tortillas for dipping.
