Method

Filling Preparation

  1. 1

    Cook the beef

In a large skillet over medium heat, add the ground beef. Cook until browned, breaking it apart with a spatula, about 5-7 minutes.

  2. 2

    Add aromatics

Add the chopped onion and minced garlic to the skillet. Sauté until the onion becomes translucent, about 3-4 minutes.

  3. 3

    Mix in tomatoes and spices

Stir in the canned diced tomatoes, chili powder, ground cumin, salt, and black pepper. Allow the mixture to simmer for about 5 minutes, then remove from heat.

  4. 4

    Combine with cheese

Stir in 1 cup of the shredded cheese into the beef mixture until melted and combined. Set aside.

Enchilada Assembly

  1. 5

    Preheat oven

Preheat your oven to 350°F (175°C).

  2. 6

    Prepare tortillas

Warm the corn tortillas in a skillet or microwave until they are pliable.

  3. 7

    Fill tortillas

Spread about 1/4 cup of the beef mixture down the center of each tortilla. Roll the tortillas tightly around the filling.

  4. 8

    Arrange in baking dish

Place the rolled tortillas seam-side down in a greased 9x13 inch baking dish.

  5. 9

    Add enchilada sauce

Pour the enchilada sauce evenly over the filled tortillas, then sprinkle the remaining shredded cheese on top.

  6. 10

    Bake

Bake in the preheated oven for 20-25 minutes, until the cheese is melted and bubbly.

  7. 11

    Garnish and serve

Remove from the oven and let cool for a few minutes. Top with sour cream and chopped cilantro before serving.
