    Chop the dark chocolate into small pieces and place in a heatproof bowl. Melt the chocolate over a double boiler or in the microwave in 30-second intervals, stirring until smooth. Set aside to cool slightly.

    In a separate bowl, whisk the eggs and granulated sugar together until the mixture is pale and creamy. Add in the cinnamon, vanilla extract, and a pinch of salt.

    Combine Mixtures

    Slowly add the melted chocolate to the egg mixture, folding gently until fully combined.

    In another bowl, whip the heavy cream until it forms soft peaks. Gently fold the whipped cream into the chocolate mixture, ensuring not to deflate the cream.
