Make Hibiscus Tea Base

Boil Water
In a medium saucepan, bring 4 cups of water to a boil over medium-high heat.

Add Hibiscus Flowers
Once the water is boiling, remove it from heat and add 1 cup of dried hibiscus flowers. Stir gently.

Steep
Cover the saucepan and let the hibiscus flowers steep for about 20 minutes.

Strain
After steeping, strain the mixture through a fine mesh sieve into a large bowl or pitcher to remove the hibiscus flowers.

Add Sugar and Lime Juice
While the tea is still warm, stir in 1 cup of sugar until fully dissolved. Then, add 1 cup of lime juice and mix well.

Cool the Tea
Allow the hibiscus tea base to cool to room temperature, then refrigerate until chilled.
Serve the Jamaica Cooler

Prepare Glasses
In a tall glass, add 1 cup of ice cubes.

Pour Hibiscus Base
Pour 1 cup of the chilled hibiscus tea base over the ice.

Add Sparkling Water
Top off the glass with 1 cup of sparkling water.

Garnish
Garnish with fresh mint leaves and lime wedges to taste.

Stir gently and serve immediately for a refreshing Jamaica Cooler.
