For the Ranchero Sauce

Method

To Make the Ranchero Sauce

    Heat the Olive Oil

    In a medium saucepan, heat 2 tablespoons of olive oil over medium heat.

    Sauté the Onion

    Add the diced onion and cook until softened, about 5 minutes.

    Add Garlic and Peppers

    Stir in the minced garlic and diced bell pepper, cooking for another 2 minutes until fragrant.

    Add Tomatoes and Seasonings

    Add the diced tomatoes, cumin, salt, and pepper. Stir well and let simmer for 10-15 minutes, until the sauce thickens.

    Finish with Cilantro

    Remove from heat and stir in the chopped cilantro. Set aside.

To Prepare the Huevos

    Fry the Tortillas

    In a skillet over medium heat, lightly fry the corn tortillas for about 30 seconds on each side until warm and slightly crispy. Remove and place on plates.

    Cook the Eggs

    In the same skillet, crack the eggs and fry to your desired doneness (sunny-side up or over-easy) for about 3-4 minutes.

    Assemble the Dish

    Place one fried egg on each tortilla, then generously spoon the ranchero sauce over the eggs.

    Garnish and Serve

    Top with sliced avocado, crumbled feta cheese, and a dollop of sour cream if desired. Serve immediately.
