    Rinse the Rice

    In a fine mesh strainer, rinse the long grain white rice under cold running water until the water runs clear. This removes excess starch and helps achieve a smooth texture.

    Soak the Rice

    In a large bowl, combine the rinsed rice and 4 cups of water. Let the rice soak for at least 4 hours, or preferably overnight, at room temperature. This softens the rice and enhances the flavor.

Blending and Flavoring

    Blend the Mixture

    After soaking, drain the rice and return it to the blender. Add the 4 cups of fresh water, 2 cinnamon sticks, and a pinch of salt. Blend on high until the mixture is smooth and creamy, about 1-2 minutes.

    Strain the Mixture

    Pour the blended mixture through a fine mesh strainer or cheesecloth into a large bowl or pitcher to separate the liquid from the rice pulp. Use a spatula to press down on the pulp to extract as much liquid as possible.

    Add Flavorings

    To the strained liquid, add 1 cup of sugar, 1 tsp of vanilla extract, and 2 cups of milk (or almond milk). Stir until the sugar is completely dissolved.

Serving

    Chill and Serve

    Refrigerate the horchata for at least 1 hour to chill. Serve over ice and garnish with a sprinkle of cinnamon if desired.
