Main Dish Preparation

  1. 1

    Cook Chorizo

In a medium skillet over medium heat, crumble the chorizo and cook until browned, about 5-7 minutes. Drain excess fat and set aside.

  2. 2

    Sauté Vegetables

In the same skillet, add chopped onion and bell peppers. Sauté until softened, about 4-5 minutes.

  3. 3

    Combine Ingredients

Add the cooked chorizo back to the skillet with the vegetables. Stir to combine.

  4. 4

    Whisk Eggs

In a bowl, whisk together the eggs, salt, black pepper, and cumin until well combined.

  5. 5

    Cook Eggs

Pour the egg mixture into the skillet with chorizo and vegetables. Cook, stirring gently until the eggs are just set, about 5-6 minutes.

  6. 6

    Add Cheese

Sprinkle the cheddar cheese over the top of the egg mixture and cover the skillet. Allow the cheese to melt, about 2 minutes.

  7. 7

    Warm Tortillas

In a separate skillet, warm the tortillas over medium heat for about 30 seconds on each side or until pliable.

Side Preparation

  1. 8

    Prepare Avocado

Slice the avocado in half, remove the pit, and scoop out the flesh. Cut into slices.

  2. 9

    Chop Tomatoes

Dice the tomatoes into small pieces.

  3. 10

    Chop Cilantro

    Finely chop the fresh cilantro.

  4. 11

    Prepare Lime

Cut the lime into wedges for serving.
