Method
Eggs
Prepare the Eggs
In a small bowl, crack 2 large eggs and beat them lightly. Season with 1 tsp of salt and 1 tsp of black pepper.
Cook the Eggs
Heat 1 tbs of butter in a non-stick skillet over medium heat. Once the butter is melted and bubbling, pour in the eggs. For over easy, cook for about 2-3 minutes until the edges are set, then gently flip and cook for an additional 1-2 minutes. For scrambled, stir gently until fully cooked and fluffy, about 3-4 minutes.

Prepare the Potatoes
Wash and peel the 2 medium potatoes. Cut them into small cubes.
Cook the Potatoes
In a large skillet, heat 1 tbs of olive oil over medium-high heat. Add the cubed potatoes, 1 tsp of paprika, 1 tsp of garlic powder, 0.5 tsp of salt, and 0.5 tsp of black pepper. Cook for about 15-20 minutes, stirring occasionally, until they are golden brown and tender.

In a small bowl, place 0.5 cups of your favorite salsa, ready for serving.
