Prepare the Dough

Combine Ingredients
In a medium saucepan, combine 1 cup of water, 2 tablespoons of unsalted butter, 1 tablespoon of granulated sugar, and 1 teaspoon of salt. Bring the mixture to a boil over medium heat.

Mix in Flour
Once the mixture is boiling, remove it from heat and add 1 cup of all-purpose flour. Stir quickly with a wooden spoon until the dough forms a ball and pulls away from the sides of the pan.

Incorporate Eggs
Allow the dough to cool for about 5 minutes. Then, add 2 large eggs, one at a time, mixing well after each addition until the dough is smooth and glossy.
Prepare Cinnamon Sugar Mixture

Mix Sugar and Cinnamon
In a small bowl, combine 1 cup of granulated sugar and 2 teaspoons of ground cinnamon. Mix well and set aside for later use.

Heat Oil
In a deep frying pan or large pot, heat 2 cups of vegetable oil over medium heat until it reaches 350°F (175°C).

Pipe Dough
Transfer the dough to a piping bag fitted with a large star tip. Carefully pipe 4-6 inch long strips of dough into the hot oil, cutting them off with scissors.

Fry Churros
Fry the churros until they are golden brown, about 2-3 minutes on each side. Use a slotted spoon to remove them from the oil and place them on paper towels to drain excess oil.
