    Prep Your Ingredients

    Chop the bell peppers and onions, shred the cooked chicken, and slice the jalapeños if using. Set aside.

    Prepare the Cheese

    If not using store-bought queso casero, prepare your homemade cheese. It should be soft and easy to spread.

Cooking

    Heat the Oil

    In a large skillet, heat 2 tablespoons of vegetable oil over medium heat until shimmering.

    Assemble the Tortillas

    Place a tortilla in the skillet, sprinkle 1/2 cup of queso casero on one half, and add your choice of optional fillings on top.

    Fold and Cook

    Fold the tortilla in half and press down gently. Cook for about 2-3 minutes until the bottom is golden brown, then flip and cook the other side for another 2-3 minutes.

    Repeat

    Remove the cooked quesadilla from the skillet and repeat the process with the remaining tortillas, adding more oil to the skillet if necessary.

Serving

    Once all quesadillas are cooked, slice them into wedges and serve warm with additional toppings like chopped cilantro or jalapeños.
