    Prepare the Dough

    In a large bowl, combine warm water and yeast. Let it sit for about 5 minutes until frothy. Add the flour, sea salt, and 2 tablespoons of olive oil. Mix until a shaggy dough forms.

    Knead the Dough

    Turn the dough out onto a floured surface and knead for about 10 minutes until smooth and elastic. Place the dough in a greased bowl, cover with a damp cloth and let it rise in a warm place for about 1 hour or until doubled in size.

    Shape and Rest

    Once risen, punch the dough down and transfer it to a greased baking sheet. Stretch it out with your fingers to fit the pan. Cover and let it rest for another 30 minutes.

    Preheat the Oven

    Preheat your wood oven to about 450°F (232°C).

    Prepare Toppings

    Dimple the surface of the dough with your fingers, drizzle with the remaining olive oil, sprinkle sea salt, and scatter fresh rosemary on top.

    Bake in the preheated wood oven for about 20-25 minutes or until golden brown.
