    Prepare the Ragu

    In a large pan, heat the olive oil over medium heat. Add the diced onion, carrot, and celery. Sauté until the vegetables are soft, about 5-7 minutes.

    Add Garlic and Pork

    Stir in the minced garlic and cook for about 1 minute, then add the ground pork to the pan. Cook until the pork is browned and cooked through, about 8-10 minutes.

    Deglaze with Wine

    Pour in the red wine and let it simmer for about 5 minutes, allowing the alcohol to evaporate.

    Add Tomatoes

    Stir in the crushed canned tomatoes and season with salt and black pepper. Let the sauce simmer on low heat for about 30 minutes, stirring occasionally.

    Cook the Pappardelle

    Meanwhile, cook the pappardelle pasta in a large pot of boiling salted water according to package instructions. Drain and set aside.

    Combine and Serve

    Once the ragu is ready, mix the cooked pappardelle with the sauce. Serve hot, topped with grated Grana Padano cheese and chopped fresh basil.
