Marinate the Chicken
In a bowl, mix olive oil, mixed herbs, salt, and black pepper. Add chicken breasts and coat them well. Marinate for at least 30 minutes.

Prepare the Lemon Aioli
In a small bowl, combine mayonnaise, minced garlic, and the juice of half the lemon. Mix well and set aside.

Blister the Peppers
Heat a skillet over medium-high heat. Add the whole bell peppers and cook, turning occasionally, until blistered and charred. Remove from the heat and let cool, then slice into strips.

Cook the Chicken
In the same skillet, add a little more olive oil if needed and cook the marinated chicken breasts over medium heat for about 6-7 minutes on each side or until fully cooked and no longer pink inside.

Assemble the Dish
Once the chicken is cooked, place a slice of provolone cheese on each breast and cover with a lid until melted. Serve on a plate with blistered peppers, a handful of arugula, and drizzle with lemon aioli.
