Cheese Making Process

    Prepare the Milk

    In a large pot, combine the cow's milk and goat's milk. Heat the mixture to 32°C (90°F). Stir gently to mix.

    Add Rennet and Calcium Chloride

    Dissolve the calcium chloride in a small amount of cool water and add it to the milk. Then, add the rennet and stir gently for 30 seconds. Let the mixture sit undisturbed for 1 hour until it forms a gel-like curd.

    Cut the Curd

    Once the curd has formed, cut it into small cubes (about 1 cm). Allow it to rest for 5-10 minutes.

    Cook the Curd

    Heat the curds slowly to 38°C (100°F), stirring gently to prevent clumping. Once the temperature is reached, maintain it for about 30 minutes while stirring occasionally.

    Drain the Curds

    Line a cheese mold with cheesecloth. Use a slotted spoon to transfer the curds into the mold, pressing gently to remove excess whey.

    Salting and Aging

    Sprinkle the salt evenly over the curds, pressing lightly. Cover and allow the cheese to drain for 24 hours. After draining, remove the cheese from the mold, and place it in a cool, dark place to age for at least 2 months, turning it regularly.

    Inoculate with Blue Mold

    During the aging process, pierce the cheese with a skewer to create air pockets for mold development. After a few weeks, inoculate it with Penicillium roqueforti by rubbing the surface with the mold.

    Final Aging

    Allow the cheese to age for a total of 3-4 months, developing the characteristic blue veins and flavor of Valdeon.
