    Preparing the Pork Chops

    Season the pork chops with salt and black pepper on both sides. Let them sit at room temperature for about 30 minutes.

    Smoking the Chops

    Preheat your smoker to 225°F (107°C). Add your choice of wood chips (hickory or applewood works well). Place the pork chops in the smoker and smoke for about 1 hour, or until the internal temperature reaches 145°F (63°C).

    Making Maple Jus

    In a saucepan, combine maple syrup, butter, minced garlic, and fresh thyme. Bring to a simmer and cook for about 5-7 minutes until slightly thickened. Set aside.

    Preparing Hazelnuts

    Toast the hazelnuts in a dry skillet over medium heat for about 5 minutes until golden brown. Remove from heat and chop coarsely.

    Serving

    Plate the smoked pork chops, drizzle with maple jus, and sprinkle chopped hazelnuts on top. Serve immediately.
