    Cook Quinoa

    Rinse quinoa under cold water and cook according to package instructions, typically 1 cup of quinoa to 2 cups of water. Bring to a boil, then reduce heat and simmer for about 15 minutes. Fluff with a fork and set aside.

    Prepare Asparagus

    Trim the ends of the asparagus and blanch in boiling water for about 2-3 minutes until bright green and tender. Drain and set aside.

    Sear Salmon

    Season salmon fillets with salt and pepper. Heat a skillet over medium-high heat with a drizzle of olive oil. Sear salmon skin-side down for about 5 minutes, then flip and cook for another 3-4 minutes until cooked through and golden brown.

    Assemble Salad

    In a large bowl, combine mixed greens, cooked quinoa, blanched asparagus, sliced olives, and segments of the orange. Top with the seared salmon.

    Dress the Salad

    Drizzle sherry vinaigrette over the salad and toss gently to combine before serving.
