Cooking Instructions

  1. 1

    Preheat the Oven

Preheat your oven to 400°F (200°C).

  2. 2

    Prepare the Fish

Rinse the market fish fillets under cold water and pat them dry with paper towels. Season both sides with salt and black pepper.

  3. 3

    Sauté Vegetables

In a large skillet, heat olive oil over medium heat. Add the okra and sauté for about 3-4 minutes until slightly tender. Stir in the corn and cook for an additional 2 minutes.

  4. 4

    Add 'Nduja

Add the 'nduja to the skillet with the vegetables, stirring until it melts and evenly coats the corn and okra mixture.

  5. 5

    Combine and Roast

Spread the vegetable mixture onto a baking sheet and place the fish fillets on top. Drizzle a little olive oil over the fish and roast in the preheated oven for about 15-20 minutes or until the fish is cooked through and flakes easily with a fork.

  6. 6

    Serve

Remove from the oven and serve immediately with lemon wedges on the side.
