Prepare the Roast
Preheat the oven to 350°F (175°C). Pat the beef roast dry with paper towels and season generously with salt and black pepper.

Sear the Beef
In a large oven-safe skillet, heat the olive oil over medium-high heat. Add the beef roast and sear on all sides until browned, about 3-4 minutes per side.

Roast the Beef
Transfer the skillet to the preheated oven. Roast the beef for about 1 hour, or until the internal temperature reaches 135°F (57°C) for medium-rare.

Add Toppings
Remove the roast from the oven and let it rest for 10 minutes. Spread a layer of dijonnaise over the top of the roast, then layer the caramelized onions and gruyère cheese on top.

Melt the Cheese
Return the roast to the oven and broil for an additional 3-5 minutes, or until the cheese is melted and bubbly.

Slice and Serve
Remove from the oven, slice the roast beef, and serve warm with any remaining caramelized onions and dijonnaise.
