    Prepare the Duck Breast

    Score the skin of the duck breasts in a crosshatch pattern, being careful not to cut into the meat. Season both sides with salt and black pepper.

    Cook the Duck

    Place the duck breasts skin-side down in a cold, dry skillet. Turn the heat to medium and cook until the skin is crispy and golden, about 6-8 minutes. Flip the duck breasts and cook for an additional 4-6 minutes for medium-rare. Remove from skillet and let rest.

    Prepare the Cauliflower

    While the duck is resting, cut the cauliflower into florets. Steam or boil the cauliflower until tender, about 5-7 minutes. Drain and toss with olive oil, salt, and pepper.

    Make the Date Vinaigrette

    In a small saucepan, combine chopped dates, balsamic vinegar, and water. Simmer over low heat until the dates break down and the mixture thickens slightly, about 10 minutes. Blend until smooth.

    Slice the duck breasts and arrange them on a plate alongside the cauliflower. Drizzle with date vinaigrette and sprinkle with chopped pistachios.
